Since you can collaborate heavily on your Google Documents with other people, it's important to see who made what changes when.
In Microsoft Office, this feature was called Track Changes; in Google Docs it's called Revision History.
Open a Google Document, then go to the Docs File menu (not the one at the top of the screen — the one inside the web page) and click See Revision History.
A revision history sidebar will appear, showing changes by user. You can click on a change to temporarily rewind the document to that point and see what the change was. If you need to, you can click Restore this revision to undo the document to that point. Any subsequent changes will be lost so be careful!
When you're done looking at the revision history, click the X at the top-right of the revision pane to return to normal editing mode.
